Sparkling wine holds a special place at Adelaida, and this newest vintage beautifully expresses why. Crafted entirely from Pinot Noir sourced from our historic HMR Vineyard, the wine reflects a site defined by ancient limestone bedrock—soils that challenge the vines and lend a compelling natural tension to the fruit. Primary fermentation began with native yeasts, allowing the vineyard’s character to shine, followed by secondary fermentation in bottle using the traditional méthode. The wine then rested for three years en tirage, developing depth, finesse, and refined complexity. Aromatically, it captivates with notes of delicate Asian pear, fragrant jasmine blossom, and a subtle essence of toasted brioche born from extended lees contact. On the palate, the wine is energetic and finely textured, offering both immediacy and precision. Delicious now, it also possesses the structure to age gracefully for a decade or more.
