Revered as the benchmark of Adelaida’s Cabernet portfolio, “The Viking” highlights the essence of varietal Cabernet fruit. Established in 1992 the vineyard lies on an improbable steep grade of chalky limestone in the mountainous west side of Paso Robles. At 1,600 feet in elevation, it benefits from the nearby Pacific Ocean influence, receiving cool afternoon breezes and a dramatic daily temperature swing of 40-50 degrees. Purity of fruit and a salivating mountain character result from the confluence of the optimum sun exposed site and clarity of balancing natural fruit acidity. Non-interventionist winemaking aims to preserve the low yielding intensity of the vineyard.
Destemmed and fermented in open top vats with indigenous yeast, the “must” is gently punched down by hand to integrate fruit and skin tannins. After some 21 months in a selection of “center of France” cooperage (100% Tronçais Forest) only the best barrels make the cut for the Reserve designation, followed by a minimum of one year in bottle before general release. A fractional addition of Estate Cabernet Franc brings a blue fruit lift to the aromatic profile.
