Paso's take on a Rhone blend, Adelaida's 2013 Version White is a terrific blend of 42% Roussanne, 42% Viognier and 16% Grenache Blanc that spent 10 months on lees in 37% new French oak. It gives up beautiful richness in its white peach, toasted spice, white flowers and brioche-scented bouquet. This gives way to a medium to full-bodied, ripe, textured white that has loads of fruit without ever seeming heavy or cumbersome. Drink it over the coming 2-3 years.

"The blend is Grenache Blanc, Roussanne and Picpoul Blanc, grown at a high altitude on Paso Robles’s west side. The wine is dense and concentrated in apricots, oranges and mangoes, balanced with acidity and sweet oak. With a dry finish, it’s a complex wine to drink now."

"Showcasing the character of Roussanne with its rich textured viscosity, golden color and marmalade-like flavors this is Adelaida’s first Reserve Rhone White Blend.  Unlike many other white grapes these three southern French varieties are at home in the warm Paso Robles’ climate where they develop tropical aromatics while retaining balancing natural fruit acidity.  The dollop of Picpoul Blanc (5%), particularly adds a finishing crisp edginess to the wine’s beeswax complexity.   Emphasis on barrel fermentation, with nearly a full year on its lees (yeast & grape sediments) gives the wine a mild brioche component, adding even more to its multifaceted personality.  Recommended for current drinking or enjoy thru 2015."

"Leading off the three whites, the 2012 Version White checks in as blend of 33% Grenache Blanc, 25% Picpoul, 25% Viognier and the balance Roussanne. Aged 10 month in neutral barrels, it gives up pretty apple and pear fruits, with additional citrus and floral notes coming through with air. Medium-bodied, pure and elegant, it has the freshness to stand on its own, but will shine on the dinner table. Drink it over the coming couple of years. " Jeb Dunnuck

"There is no getting away from the fact this rich and moderately complex offering sits on the riper end of the spectrum, but its ripeness is manifest in its depth and its expressive, very deep fruit and not in heaviness or heat. While fairly full-bodied, it is balanced and surprisingly lively with a fascinating mix of green peach, fresh flowers and hints of hardwoods that are joined by a minerally tang in its lingering finish. As expressive as it is now, it has not yet reached its peak, and we would be more than willing to put it away for couple of years."

"I also admired their 2008 Version, a blend of 58% Roussanne and 42% Grenache Blanc. A bigger, thicker wine than the Viognier, no doubt due to all the honey and waxy notes that the Roussanne grape offers, this wine displays loads of white currant, citrus, and honeysuckle in a dense style with plenty of body and personality. This big wine is not for the faint of heart, but I like the idea of blending the more elegant and acidic Grenache with the fatter, richer Roussanne. It should drink nicely for several years as well. "

With good underlying acidity, it would be a perfect foil for a fleshy, Copper River salmon."
