Cabernet Sauvignon Estate 2013
This Estate wine comes from our celebrated Viking Vineyard. Elevation and coastal influence change the micro-climate characteristics of this hillside, contributing wider swings of day to night-time temperatures, an extended growing season, and compact clusters with an enhanced skin to juice ratio. Long a benchmark for “Paso Cabs” Viking Vineyard’s mountain fruit has the racy vibrancy of blue and red berries and the savory, structured tannins of its characteristic small berries.
With a bit of aeration the wine walks the fashion runway of flavors, from red currants to black raspberries, from cedar-wood to graphite minerality, finishing energetically with notes of mocha and vanilla spice.

2013 was the second year of the current drought conditions but one final storm energized the vines through their initial growth. A classic Central Coast warm summer proved ideal for ripening without the heat spikes that sometimes beset the region. Grapes were picked throughout mid-September, hand sorted, de-stemmed, and fermented in a series of small lot-sized tanks. Cap management consisted of daily pump-overs and punch-downs with extended post-fermentation maceration.
